Every region of Turkey has its own ingredients and cooking traditions, yet these dishes are enjoyed nationwide—often in many different versions. They’re not just flavors of Istanbul, but true ambassadors of Turkish cuisine. Their preparation often relies on ingredients uncommon in Hungarian kitchens, but essential in Turkey, such as lamb, pepper paste, red lentils, mint, or cumin.
